My aunt and cousin are coming for dinner today. I have country pork spare ribs in the crock pot and we'll have broccoli rice casserole, cranberry salad, and crescent rolls with it. Homemade chocolate strawberry shortcake for dessert!

I cooked a few chicken breasts in the crockpot with some broth and half of a packet of trader joe's taco seasoning. I'll shred it - some of us are having chicken-taco salads, others chicken and black bean burritos. Yum!

DH and I are on a health kick lately, partly because he needs to lose about 40 lbs. We have been making more vegetarian and vegan dishes lately -- not because we have any desire to eliminate any food groups, but because we learn so much from the creative ideas. I am trying not to use meat as a crutch when planning meals, and it helps us work in more vegetables.

Recently some of our more successful dishes have included this salad with lemon/tahini dressing, green smoothies (you can't taste the spinach), and pasta with shrimp, arugula, and prosciutto.

Dinner tonight is delicious! BBQ grilled chicken, fresh cut sweet potato fries and fresh green beans.

We're having a few slightly cooler days, so I'm in the mood for soup. I'm going to make a potato and corn chowder for tonight, with cheddar and bacon on top. Always a family favorite!

I'm making a marinade for tonight's Chicken Tikka Masala. The best part is cutting the fresh ginger. Man, fresh ginger smells GOOD.

Last night was Coconut Curry Chicken with peas over basmati rice and salad. I think tonight will be Rotisserie Turkey tenderloin with broccoli and roasted pototoes. :)

Love Basmati rice, Maggie. Would you mind sharing your Coconut Curry Chicken recipe? I bought coconut milk but don't have a recipe for it.

Tonight I'm making philly steak and cheese sandwiches. I'll serve fresh fruit with it. I have to go to Costco this afternoon so I'll pick up whatever looks good there.

I made a pretty tasty Chicken Salad for dinner later. It's got Craisins, walnuts, apple and diced chicken, mayo, tarragon, salt pepper, lemon juice.

Tonight we're making homemade pizza. Tomorrow night I'm doing a spicy chicken alfredo pasta dish with garlic knots.
