Taco Soup Recipe

I'm trying a new recipe in my crockpot tonight called Taco Soup. I hope it tastes as good as it smells! I got the recipe from a blog I read. There are lots of other crockpot recipes here, too, if anyone is needing some new ideas.

Ingredients:
2 lbs ground beef
1 onion, chopped
1 14.5 oz can whole kernel corn
2 16 oz cans of ranch style beans (I only used one can because I'm not a bean lover & it was fine)
* Maybe not everywhere but I know here - you find cans at the grocery store of ranch style beans. If you don't have those - substitute pinto or black or whatever you like.
3 cans of diced tomatos (maybe substitute 1 can rotel if you like spicy) (I got the garlic/onion kind and I think it gave it great flavor)
1 pkg taco seasoning
1 pkg Hidden Valley dressing mix
Brown and drain meat. Saute onions for a few minutes. Combine all ingredients the crockpot. Add chili powder, salt and pepper to taste. Cook on low for 4-6 hours. Serve with shredded cheese and fritos. And sour cream.

It was a winner with everyone! Even picky DS who grumbled about the onions had seconds. I did use a can of Rotel and I also added some salsa (maybe 1/2 a cup) and used one can of black beans and one can of kidney beans. Next time I'll probably omit the chili powder altogether and use a bit more salsa for more of a "taco" flavor. None of us used sour cream, but we all topped it with a spoonful of shredded cheese!

TY for sharing this recipe - it sounds delicious! Can't say I've ever seen ranch style beans (what makes em 'ranch'
?) in my grocery store, so I'll just use another bean.

sweet, we have Ranch style beans in the grocery stores here, but I don't normally keep them on hand. I have no idea what the difference is in them. They look and taste similar to a pinto bean and they're about the size of a kidney bean. I think about any kind of bean would work well in this recipe.

I've always wanted to make a Taco Soup...was wondering what size cans do you use for the diced tomatoes?

I used a 32 oz can of crushed tomatoes and one small can of Rotel. I only used one lb. of ground beef, though. The recipe calls for 2 lbs. but I didn't want to make a huge amount the first time in case we didn't like it. Next time, I'll use 2 lbs. of ground beef and 2 cans of crushed tomatoes. I use crushed tomatoes in place of diced all the time because my kids have issues with lots of "chunks".
